The Legend of the Maids of Honour

Maids of Honour tarts are believed to have originated in the Royal kitchens at Hampton Court. Legend has it that the recipe was locked away in an iron chest until it was rediscovered by Henry VIII who presented it to Anne Boleyn, lady-in-waiting to his first wife, Catherine of Aragon. She is believed to have made the tarts for Henry who, in turn, named them 'Maids of Honour' after her.

Another story has it that Henry came across Anne and other attendants eating the cakes from a silver dish and, after tasting them, was so delighted that the recipe was kept secret and locked in an iron box in Richmond Palace.

Yet a third version claims that, in order to protect the secret, the unfortunate 'maid' who invented the tarts was imprisoned within the Palace grounds and ordered to produce the pastries solely for Henry and the Royal Household.

Over the centuries the recipe has been through as many versions as the legend of the tarts. Here is Letty's modern day recipe that we use.
 
To make 18 tarts;
First make your favorite pie pastry and cut 18 - 4 inch circles  Fit the circles into 3 inch tartlet pans. 
Keep chilled while making the filling.
 
Filling: 
1/3 cup butter
1/3 cup rice flour
1/3 cup sugar
1 teaspoon almond extract
1 egg
Soften the butter, add sugar and egg. Beat until fluffy. Add flour and almond.
 
In pastry shell place 1/2 teaspoon of raspberry jam and a full teaspoon of the filling. Bake at 435 degrees for 12 minutes.
